60 Seconds with Andres Richard

Andy is our pastry chef, and we’re always bowled over by his fantastic creativity and his triumphs of desserts and beautiful canapés. This month he absolutely stole the show at Strictly SW7 with his Museum on a Table dessert.

What are you most looking forward to in the month and why?


March arrived with an exciting new challenge for me. For our turn at the Strictly SW7 event at the Natural History Museum I was asked to create a massive maquette, and everything on it had to be edible! I was very anxious to get down to business of recreating a miniature version of the sea, mountains and woodland, with essentially just chocolate and sugar to work with.


After that intense beginning to the month I am now looking forward to maybe turning the pressure dial down … just a little bit.


What has been your biggest achievement this month?


Most definitely my ‘Museum on a Table’ dessert. I was very proud of the final result. My co-pastry chef Michelle and I worked really hard to find the right techniques to emulate the texture and appearance of every single component on the scaled model.


Being a graduate of an art college helped a lot!


Your best food fact this month


After a busy week working with more than 15kg of chocolate(!) I have learnt that chocolate is lauded for its tremendous antioxidant potential among other health benefits.

What is the best thing you have tasted this month?


Afternoon Tea at the Modern Pantry in Clerkenwell. This was traditional English afternoon tea with an innovative and unusual twist – highly recommended.


If you could try out any job for a day, what would you like to try?


I would do any administrative job, so I could quickly get bored and go back to my beloved creative world with fresh enthusiasm.


If you could be a superhero, what would you want your superpowers to be?


Teleportation! To avoid the hassle and stress while travelling to and from work
