What is the best thing you have tasted this month?
I think that would have to be our Peruvian canapés, created for a very special launch event. This style of food is really on trend at the moment, and I love the Japanese influence. It is great to be able to showcase our ability to create fantastic international food.
What are you most looking forward to in the month ahead?
We have an amazing client who is hosting their staff party in July, and so the next month is going to be full of designing their styling and food menus. They are really happy to push boundaries and be a little more extreme with their theming, which is every creative person’s ideal.
What has been your biggest achievement this month?
I was invited to take part in a panel discussion at Hotelympia a few weeks ago, to discuss "the Future Feast”. We chatted about us serving insects at Natural History Museum, the burger trend and what we think we will be seeing over the coming months. Street food was a hot topic, but we think we will see more independent street food outlets working from fixed locations. It was great to speak with some very influential industry figures, although a little scary too!
Your best food fact?
There are over 3,000 types of edible insects for us all to "enjoy”. I hate to think there are that many bugs out there, let alone more that we can’t eat!
If someone asked you to give them a single piece of advice, what would you say?
Pick your battles. Choose what you really want to achieve and go for that.
If you could be a superhero, what would you want your superpowers to be?
The ability to blink and set up tables, bars etc instantly. Now that would be a useful superpower in our industry, especially with some of the quick set ups that we have to do.
