True to Ampersand’s learning culture, we have created a rather special educational experience for all Ampersand staff members who wish to pursue an in-depth understanding of wine and its origins, the Ampersand Wine Guild.
The Guild, which has now grown to a respectable membership of thirty, sets its agenda on further understanding wine regions, wine varieties and current wine trends. With an appropriate show of reverence and ceremony, the Guild meets with suppliers and growers to taste, discuss and understand more about the whole wine making process.
The Wine Guild recently enjoyed a special tasting evening at the Old Royal Naval College’s Admiral’s House. In this superb setting, Corney and Barrow’s Olivia Marsh and Becky Lown from Jascots talked the Guild through a range of wines which encouraged us to see a different side to that much-maligned variety, rosé.
In addition to hearing about the history and process of rosé wine making, there was a carefully curated rosé wine list to taste and consider.
Each wine was accompanied by a complementary small plate, canapé or bowl food dish. For instance, Champagne Pannier Brut Rosé, which works perfectly with lamb and game, was paired with a roast rump of lamb with broad beans, pan jus and pesto, while the more local Three Choirs Premium Selection Rosé, from Gloucestershire, was served with a charcuterie board and artisan bread. The selection was completed with Wiston Estate Rosé Brut and, naturally, a delicious mature cheddar.
In addition to special events such as this tasting, an annual educational trip is planned, allowing the Guild see for themselves how different winemaking can be in different environments.
