Martin Dibben, Operations Director

As Operations Director Martin oversees many of our prestigious venues in Central London including the Museum of London Docklands and The Law Society, as well as other renowned UK destinations such as The Palace of Holyroodhouse in Edinburgh.


Known as one of the industry’s foodies, Martin’s passion and knowledge comes from working for Prue Leith in her catering business. Before joining Ampersand in April 2011 Martin worked for Artizian and prior to that he owned and managed his own successful restaurant ‘Dibbens’, nicknamed ‘The Ivy of the City’, in London’s Smithfield Market.
We enjoyed a wonderful, rustic Italian meal in an orchard, sitting under the stars.


Martin is on the board of the Champagne Academy and has been lucky enough to visit most of the best wine regions across the globe - from Australia and New Zealand to America and South Africa – and enjoy some incredible food experiences on his travels.

“One of my most unforgettable food memories was in an Italian town called Bassano Del Gratta - the heartland of Prosecco. We enjoyed a wonderful, rustic Italian meal in an orchard, sitting under the stars. Natural and simple flavours, such as a rich rabbit ragout with pappardelle, fresh ciabatta bread, local olive oil and, as the region is famous for them, Maraschino cherries. All nicely ripened under the Italian sun.”

When he is not sampling the world’s finest food and wine, Martin loves to spend a night at the Opera.
